Chicken with Cucumbers

So we will ignore how long it's been since I last posted... a lot has happened, and perhaps I will go into it at a later date, but you will notice that today's title is dealing with food.

Well, I suppose it could be talking about the actual birds, and perhaps they started messing with cucumber plants.  I could make up a story about that - but really it is a recipe I tried for the first time yesterday that I thought I would share with you : )

Chicken with Cucumbers
This recipe is a good way to use up some extra cucumbers that you have on hand, especially if you have cucumbers that grew too big and are more seedy than preferred.

2 Tbs Olive Oil
1 Tbs Butter
4 Boneless, skinless chicken breasts
Salt and Pepper
1-2 large fresh cucumbers
1/2 onion, thinly sliced (I used one small one)
1/2 tsp ground cumin (I used 1 tsp)
1/2 tsp ground mustard (I used just a little regular mustard)
2 cloves garlic, minced
1/2 cup chicken stock
3 Tbs sour cream (I used up my container which was probably more like 4-5 Tbs)

Heat oil and butter in skillet.  Cube chicken and add to pan.  Sprinkle with salt and pepper.  Cook thoroughly.  Take cucumber, peel, slice in half, seed with a spoon, then dice small.  When chicken is cooked golden brown, remove from pan.  Place onion and cucumber in pan, cover and cook 1-2 minutes.  Add chicken stock, garlic, cumin and mustard.  Cook 5-7 minutes more until onion and cucumber are tender.  Return chicken to skillet.  Stir in sour cream. 
Serve over pasta, rice or mashed potatoes (although we served over Quinoa).

I think I would add something hot, or maybe curry to add pazazz to it, but it tasted pretty good.  Very filling and satisfying!
