Taco Soup/Chili

So I thought for sure that I had mentioned this recipe before on here, but with all my searching, I can't seem to find reference to it.  But since we think it's delicious, and it comes together so quickly, I wanted to be sure to share it.  I am not the originator of this recipe.  I got the base recipe from here.  But since I can't seem to leave well enough alone and rarely follow a recipe exactly, I've made some changes that I think are delicious and fit what I usually buy.  This soup is filling and wonderful!

Taco Soup


1 small onion, chopped
1 cup green pepper, chopped
1 can refried beans [we use fat-free as there is no added oil/fat in it]

1 can chicken broth
1 can chicken (13oz) 
1 can pinto beans, drained and rinsed
1 can black beans, drained and rinsed
1 can green enchilada sauce
1 can chopped tomatoes, drained
2 cups corn [or 1 can drained]
3-4 tbs taco seasoning

Saute chopped onion and green pepper in large pan until softened.  Add in the refried beans and chicken broth.  Stir until smooth.  Add in the remainder of ingredients.  Stir and heat until warmed all the way through.  Enjoy :)

Comments: We usually enjoy eating it with tortilla chips, but it is also fine on it's own.  The enchilada sauce brings a lot of salt to the soup, so if you are ambitious enough to make your own taco seasoning, you could do that and just leave the salt out of it, but I'm not that ambitious and I love salt.

Now hopefully I can finally find my own rendition of this without having to search high and low!

  1. I'm gonna' try this :). I don't have a soup recipe like this. Looks like one we'll like here, and it also looks like one that'll could be adapted to a crock pot.

    BTW, I just got the "Fix-it and Forget-it" cookbook from the library. Last night I needed to stay up late so I filled my time browsing it. :)
