I'm sure I originally got this recipe from The Pioneer Woman, but I can't seem to find it again on her site to provide a link to it... hmm...
Although, perhaps that's for the best, because then you can't compare my unedited pictures using a "cheap" camera with hers :D

Celery Seed
Garlic Powder
Curry Powder
Ginger
Oregano
Basil
Chili Powder
Salt
Pepper
Mix the mixture together in a bowl.
I usually make a double batch because I love the spices that much!
Because the name is Lazy Chicken, it shouldn't take much to clean up after it either. So I line a broiler pan or a grill rack thing with foil, then poke holes in foil so the chicken doesn't end up boiling in it's own juices.
Once again... Lazy Chicken is the name of the game, so no need to thaw the chicken first.
Sprinkle a good amount of the seasoning on the chicken... I guess it should be about half the mix, if you want to be all technical about it : )
Put it in the oven at 350 degrees and the set the timer for 30 minutes.
Then during those 30 minutes, you can do something productive...

By the way, like my towers of cups? I started doing that years ago when I lived in my first apartment. We [my roomie and I] had a whole collection of plastic cups we'd get for free at the beginning of the semester. My hubby and I have kept up the tradition of being like cheap college students and using free plastic cups all.the.time!
After 30 minutes, it will look like this. Flip the chicken over and repeat the above steps. Sprinkle the remaining spice mixture over the chicken, put it in the oven and set the time for another 30 minutes.
Then, voila! Delicious chicken ready to slice and eat on a salad, or eat with other sides, or put on a bun and eat as a chicken sandwich... the possibilities are endless!
Lazy Chicken
Mix together your favorite seasonings... We like:
1 tsp. chili powder
1 tsp. basil
1 tsp. curry powder
1 tsp. oregano
1 tsp. pepper
1 tsp. salt
1/2 tsp. celery salt
1/2 tsp. garlic salt (although I use garlic powder)
1/2 tsp. ginger
Note: These seasonings lead to a spicy chicken... just the way we like it!
1 pound-ish frozen (not thawed) boneless skinless chicken breast
Directions
Preheat oven to 350 degrees. Line a broiler pan with foil, then cut slits for fat to drain.
Place chicken on foil. Coat one side with seasoning mixture. Bake for 30 minutes.
Turn chicken over and coat other side with seasoning mixture. Return to oven for 20-30 minutes. Check for done-ness.

ReplyDeleteAbout the plastic cups: I haven't owned real glasses since our 1st child (or my dear hubby or me) broke the last one 20+ years ago. My girls (ages 23 &17) consider glass glasses a decorating ideal: "When I have my own place..." LOL Meanwhile, another coffee mug just lost an arm... :P
